    Title: Air Fryer Tortellini w/Prosciutto

    Yield: 42 servings

    1 tb Olive oil
    3 tb Fine chopped onion
    4 cl Garlic; coarse chopped
    15 oz Can tomato puree
    1 tb Minced fresh basil
    1/4 ts (ea) salt & pepper

    2 lg Eggs
    2 tb Milk
    2/3 c Seasoned bread crumbs
    1 ts Garlic powder
    2 tb Grated pecorino Romano
    - cheese
    1 tb Minced fresh parsley
    1/2 ts Salt
    12 oz Bag refrigerated prosciutto
    - ricotta tortellini
    Cooking spray

    In a small saucepan, heat oil over medium-high heat. Add
    onion and garlic; cook and stir until tender, 3-4
    minutes. Stir in tomato puree, basil, salt and pepper.
    Bring to a boil; reduce heat. Simmer, uncovered, 10
    minutes. Keep warm.

    Meanwhile, set air fryer @ 350-|F/175-|C.

    In a small bowl, whisk eggs and milk. In another bowl,
    combine bread crumbs, garlic powder, cheese, parsley and
    salt.

    Dip tortellini in egg mixture, then in bread crumb
    mixture to coat. In batches, arrange tortellini in a
    single layer on greased tray in air-fryer basket; spritz
    with cooking spray. Cook until golden brown, 4-5
    minutes. Turn; spritz with cooking spray. Cook until
    golden brown, 4-5 minutes longer. Serve with sauce;
    sprinkle with additional minced fresh basil.

    Title: Navy Bean Vegetable Soup
    Categories: Vegetables, Beans, Herbs, Pork
    Yield: 12 servings

    4 md Carrots; thin sliced
    2 Celery ribs; chopped
    1 md Onion; chopped
    2 c Cubed fully cooked ham
    1 1/2 c Dried navy beans
    1 oz Env Knorr vegetable recipe
    - mix
    2 oz Env onion soup mix
    1 Bay leaf
    1/2 ts Pepper
    8 c Water

    In a 5 qt. slow cooker, combine the first 9 ingredients.
    Stir in water. Cover and cook on low until beans are
    tender, 9-10 hours. Discard bay leaf.
