    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: J Paul Getty Museum Carrot Cake

    Yield: 16 Servings

    MMMMM----------------------------CAKE---------------------------------
    1/2 c Canola oil
    1 c Unsweetened applesauce
    2 c Sugar
    3 lg Eggs
    2 c A-P flour
    2 ts Cinnamon
    2 ts Baking soda
    2 ts Vanilla extract
    1 ts Salt
    2 c Shredded carrots
    1 c Chopped walnuts
    1/2 c Crushed pineapple; drained

    MMMMM-------------------CREAM CHEESE FROSTING------------------------
    8 oz Cream cheese; softened
    1/4 c Butter; softened
    3 c Powdered sugar
    1/4 c Chopped walnuts
    1/4 c Crushed pineapple

    Combine all cake ingredients, in the order listed, and
    mix until blended.

    Pour into a greased 13" x 9" pan.

    Bake @ 350ºF/175ºC for approximately 1 hour, or until
    the cake starts to pull away from sides of pan and a
    toothpick inserted near the center comes out clean.

    Cool on rack.

    Combine all frosting ingredients and frost cake.

    Chill, covered at least two hours. Overnight is better.
    This cake gets better as it ages a bit.
