Title: One Pot Vegetable Soup

Yield: 6 servings
1 tb Oil
1/2 c Chopped celery
1/4 c Chopped onion
2 cl Garlic; minced
7 c Chicken broth
14 1/2 oz Can diced tomatoes;
- undrained
1 1/2 c Frozen mixed vegetables
1 ts Italian seasoning
1 ts Salt
1/2 ts Black pepper
1 c Small shell pasta
In a soup pot over medium heat, heat oil. Add celery,
onions, and garlic; cook 5 minutes, stirring
occasionally. Add broth, diced tomatoes with liquid,
mixed vegetables, Italian seasoning, salt, and pepper;
bring to a boil.
Reduce heat to low and simmer 15 minutes. Add pasta and
cook 8 to 10 more minutes, or until pasta is tender.
