MMMMM----- Recipe via Meal-Master (tm) v8.06
Title: Vanilla Panna Cotta w/Blackberry Sauce

Yield: 4 servings
300 ml Double cream
200 ml Whole milk
50 g Caster sugar
2 Sheets gelatine
1 ts Vanilla bean paste
150 g Blackberries
2 tb Caster sugar
5 tb Water
1 Squeeze lemon
Combine the milk, cream and sugar in a sauce pan over a
medium heat. Bring to a simmer stirring to dissolve the
sugar
Stir in the vanilla. Meanwhile soak the gelatine sheets
in cold water for 5 minutes. Squeeze out the excess
water, add to the cream and stir to dissolve.
Pour into moulds and place in the fridge for 2-3 hours
To make the sauce, reserve 4-8 berries and put the
remaining blackberries into a saucepan with the sugar
and water. Bring to a simmer for 5 minutes, crushing the
berries
Add a squeeze of lemon juice, pass through a sieve and
add the reserved blackberries to marinate
When ready to serve sit the moulds in warm water for 20
seconds, invert onto a plate and serve with the
blackberries and sauce
