    Title: Seafood Pasta w/Clams, Squid, Prawns & Zucchini
    Categories: Seafood, Pasta, Squash, Chilies
    Yield: 6 servings

    Olive oil
    3 (to 4) squid; cleaned, in
    - rings w/tentacles retained
    20 Clams; purged, shells
    - scrubbed
    25 Shrimp; peeled, deveined,
    - tails on
    2 lg Green zucchini; sliced in
    - long batons
    2 cl Garlic; thin sliced
    Chopped parsley
    Chile flakes
    8 oz Bucatini or similar pasta;
    - cooked al dente, drained

    Retain about a cup of the cooking water for the sauce.

    Saut++ zucchini in pan until just coated in oil. Remove
    to a plate.

    Add a dash more oil, saut++ calamari (squid), then prawns
    (briefly).

    Add the zucchini back to the pan, add the clams and 1/4
    cup of the reserved pasta liquid and cover for couple of
    minutes to allow the clams to open.

    Uncover.

    Add cooked pasta, toss and cover.

    Discard any unopened clams.

    Sprinkle with chile flakes and parsley. Serve.

    Title: Italian Sausage Zucchini Soup
    Categories: Pork, Vegetables, Squash, Herbs
    Yield: 10 servings

    20 oz Hot or sweet Italian
    - sausage
    4 Celery ribs; chopped
    1 md Onion; chopped
    2 ts Italian seasoning
    1 ts Dried oregano
    1/2 ts Salt
    1/2 ts Garlic powder
    1/2 ts Dried basil
    2 md Zucchini; in 1/2" cubes
    2 md Bell peppers; chopped
    58 oz (4 cans) whole tomatoes;
    - undrained, crushed
    14 1/2 oz Chicken broth
    1 ts Sugar

    In a 6 qt. stockpot, cook and crumble sausage over
    medium-high heat until no longer pink, 5-7 minutes.
    Remove with a slotted spoon.

    Add celery, onion and seasonings to same pot; cook and
    stir until onion is tender, 4-6 minutes. Stir in sausage
    and remaining ingredients; bring to a boil. Reduce heat;
    simmer, covered, until zucchini and peppers are tender,
    about 30 minutes.
