    December 16 - Chocolate Covered Anything Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Chocolate Covered Bacon Strips
    Categories: Five, Appetisers, Pork, Chocolate
    Yield: 12 Servings

    12 sl Thick-cut bacon
    12 Bamboo/wooden skewers
    1 c Semi-sweet chocolate chips
    1 tb Shortening or lard

    Preheat oven to 400ºF/205ºC.

    Place a baking rack on top of a large baking sheet.

    Thread each slice of bacon onto a skewer; place skewered
    bacon on the baking rack.

    Bake bacon in the preheated oven until crisp; 20 to 25
    minutes. Remove from oven and cool completely.

    Combine chocolate chips and shortening in a microwave-
    safe bowl. Heat in the microwave in 30 second intervals
    until chocolate is melted and smooth, stirring after
    each interval.

    Coat each side of the skewered bacon with the chocolate
    mixture using a pastry brush. Place coated bacon on a
    sheet of waxed paper. Refrigerate until firm, at least
    30 minutes. Store in refrigerator until ready to serve.

    Title: Chocolate Covered Strawberries
    Categories: Five, Fruits, Chocolate
    Yield: 12 Servings

    1 pt Fresh strawberries
    8 oz Pkg chocolate bark.

    Wash and drain strawberries. Pat dry with paper towel.
    Leave stems intact. Place half of the chocolate in a
    microwave safe bowl. Microwave on high until melted
    (appx 2 min). Holding berries by the stem, dip one at a
    time into the chocolate. Gently shake excess and place
    on waxed paper until firm. If chocolate becomes too
    thick reheat for a few seconds.

    CHOCOLATE BASKET: cover a dish of desired shape (pie
    pan) with foil and spray lightly with Pam. Place melted
    chocolate in a ziploc bag and seal. Snip a small hole in
    the corner and drizzle the chocolate to create a basket.

    Chill until firm. Carefully remove the basket. Place on
    a serving tray and fill with chocolate covered
    strawberries.
