Title: Shrimp Soup w/Chile Tortilla Strips

Yield: 6 Servings
1 lg Poblano chile; seeded,
- chopped
1 md Onion; chopped
2 cl Garlic; minced
1 tb Oil
1 qt Chicken broth
1/4 ts (ea) salt & crushed red
- pepper
12 oz Frozen shrimp; peeled,
- deveined
1 c Frozen corn
15 oz Can cannellini beans; rinsed
- drained
1/4 c Snipped fresh cilantro
2 tb Lime juice
1 sm Avocado, halved, seeded,
- peeled, thin sliced or
- chopped
Chile Tortilla Strips
- (separate recipe)
In a 4 to 5 quart Dutch oven cook poblano pepper, onion,
and garlic in hot oil until just tender. Add broth, salt
and crushed red pepper. Bring to boiling. Add frozen
shrimp, corn and drained beans; return to boil.
Simmer, uncovered, about 2 minutes or until shrimp are
opaque. Stir in cilantro and lime juice. Serve in shallow
bowls topped with avocado and Chili Tortilla Strips.
Makes: 6 servings
