Title: Mediterranean Nachos

7 oz pkg roasted red pepper hummus
6 c tortilla chips
1/2 c dried tomato pesto
12 oz jar marinated artichoke salad
: - drained, coarse chopped
4 oz basil & tomato flavoured feta
: - cheese
2 tb minced shallot
: Crushed red pepper

Set oven @ 475ºF/246ºC.

Line a 15" x 10" x 1" baking pan with nonstick foil.
Arrange chips on baking pan.

Dollop hummus over chips. Top with spoonfuls of pesto and
artichoke salad. Sprinkle with cheese, shallot, and red
pepper. Bake 6 to 8 minutes or until the cheese is
softened.

Makes: 4 servings
