Title: Gyro Nachos w/Tzatziki Sauce

Yield: 10 Servings
2 1/2 lb Bone-in chicken thighs;
- skinned
1 md Red onion; thin sliced
2 tb Lemon juice
2 tb Red wine vinegar
2 tb Olive oil
4 ts Dried oregano; crushed
6 cl Garlic; minced
1 ts Salt
8 oz Plain pita chips
1/2 c Chopped tomato
MMMMM-----------------------TZATZIKI SAUCE----------------------------
6 oz Carton plain Greek yogurt
1 c Chopped cucumber
2 ts Snipped fresh dill
2 cl Garlic; minced
1 ts Lemon juice
1/4 ts Salt
In a small bowl combine yogurt, cucumber, dill, garlic,
lemon juice, and salt.
In a 3 1/2 or 4 quart slow cooker combine the first eight
ingredients (through salt). Cover and cook on low for 6
to 7 hours or on high for 3 to 3 1/2 hours.
Using a slotted spoon, remove chicken and onion from
cooker, reserving cooking juices. Remove bones from
chicken; shred chicken using two forks. In a bowl combine
shredded chicken and onion; toss with enough cooking
juices to moisten.
Serve chicken mixture over pita chips. Top with Tzatziki
Sauce and tomato.
Makes: 10 servings
