    Title: Helen Watson's Bath Buns

    MMMMM---------------------------BATTER--------------------------------
    150 g A-P flour; (5 oz)
    1 ts Caster sugar
    2 ts Dried yeast
    +=OR=+
    15 g Fresh yeast
    150 ml Milk; hand-hot (warm if
    - using fresh yeast)
    150 ml Water; less 4 tb, hand-hot
    - (warm if using fresh
    - yeast)

    MMMMM---------------------------DOUGH--------------------------------
    300 g Plain flour; (11 oz)
    50 g Butter; (2 oz), diced
    2 lg Eggs; beaten
    75 g Caster sugar (3 oz)
    175 g Sultanas (6 oz)
    50 g Cut mixed peel; (2 oz)

    MMMMM-------------------------EGG GLAZE------------------------------
    1 lg Egg
    1 ts Caster sugar
    1 tb Water
    40 g Sugar lumps; (1 oz) crushed

    Place the batter ingredients in a large bowl. Beat with
    a wooden spoon until smooth, then leave in a warm place
    until frothy for about 20 minutes.

    For the dough, place the flour in a bowl and rub in the
    butter until the mixture resembles fine breadcrumbs.

    Add the rubbed in mixture, eggs, sugar, sultanas and
    mixed peel to the batter. Beat well for abt 10 minutes.

    Cover and leave to rise for about 1 hour, or until the
    dough has doubled in size and will spring back when
    lightly pressed.

    Set oven to 220ºC/425ºF/Gas 7 and lightly butter 2
    baking sheets.

    Beat the dough well for a few minutes. Place tablespoons
    of the dough on the baking sheets Cover and leave in a
    warm place for 30 minutes until doubled in size.

    Place the egg, sugar and water in a bowl and beat until
    well mixed.

    Uncover the buns and brush with the egg glaze and sprinkle
    with crushed sugar. Bake for 15 to 20 minutes. Leave to
    cool on a wire rack.
