    Title: Sausage Jambalaya

    Yield: 6 Servings

    1/4 lb Fully cooked smoked turkey
    - sausage
    3/4 c Chopped onion
    1 c Chopped bell pepper; any
    - colour
    1 c Sliced fresh mushrooms
    1 cl Garlic; minced
    1 ts Chilli spice mix
    1/4 ts Ground red pepper
    2 1/4 c Water
    1 14 1/2 ounce can tomatoes;
    - cut up
    2 c Cubed cooked pork
    1 9 ounce package frozen cut
    - okra
    1 c Long grain rice
    1 tb Instant chicken bouillon
    - granules

    Halve sausage lengthwise and cut into 1/4" slices.

    In a 12" skillet cook sausage, onion, green pepper,
    mushrooms, and garlic until onion is tender.

    Stir in chili powder, ground red pepper, and 1/4 teaspoon
    pepper. Cook and stir for 1 minute.

    Stir in water, undrained tomatoes, pork, okra, uncooked
    rice, and bouillon granules. Bring to boiling; reduce
    heat. Cover and simmer for 15 to 20 minutes or until rice
    is tender.

    Makes: 6 servings
