Title: Hanna's Magic Meatballs

Yield: 6 servings
2 lb Ground meat
3/4 c Almond meal
1/4 Capers
1/4 c Fresh grated Parmesan
1 ts Dried basil
1/4 ts Oregano
1 cl Garlic; chopped
1/2 c Finely, finely chopped kale
1 lg Egg
Salt & pepper
28 oz Can diced tomatoes
Olive and coconut oils; to
- fry
Mix all ingredients except the diced tomatoes, olive and
coconut oil. Once mixed make into balls. You can
determine the size you want - we went with medium size
about 1" - 1 1/2". Once you have made the mixture into
balls, fry them with a mixture of coconut and olive oil
until brown on each side. Add 1 large can of diced
tomatoes to the browned meatballs and allow to simmer
for about 20 minutes. If your sauce is thick, you can
add water. Sprinkle Parmesan cheese and you are done.
I got this recipe from Hanna Marcotti and my entire
family enjoyed them!
