Title: Lamb Shashlik

Yield: 4 Servings
1 1/2 lb Lamb; cut from leg
3 md Onions; sliced
1 tb Parsley; fresh chopped
1 1/4 c Lemon juice
1 ts Pepper peas
Trim away all fat from meat. Cut in 1 1/2" cubes. Place
in a bowl together with onion, parsley, pepper & lemon
juice. Cover and refrigerate overnight. Remove meat
from marinade and pat dry. Skewer the meat. Preheat
the broiler to high. Broil under very high heat,
turning often until done and sprinkiling with
water or wine.
Well done will take about 20 minutes. Serve hot
immediately with fresh vegetables and greens.
