Title: Mini Gyro Burgers w/Watermelon-Feta Salad

Yield: 4 Servings
16 oz Ground lamb
1/4 c Chopped fresh mint
1/2 ts Dried oregano; crushed
2 tb Fine chopped red onion
1/2 ts Salt
1/4 ts Black pepper
4 Whole wheat or plain pita
- bread rounds
Fresh mint leaves (opt)
MMMMM-------------------WATERMELON-FETA SALAD------------------------
1 c Chopped seedless watermelon
1/4 c Crumbled feta cheese (1
- ounce)
2 tb Finely chopped red onion
1 tb Snipped fresh mint
1 tb Lemon juice
1 ts Olive oil
In a small bowl combine watermelon, cheese, onion, mint,
lemon juice, and oil; toss gently to coat. Cover;
refrigerate for up to 2 days. Makes 1 1/3 cups.
In a medium bowl combine all ingredients except pita
bread rounds. Shape into eight 1/2" thick patties; place
on a foil-lined baking sheet. Broil 4" from heat 6 to 9
minutes or until done, turning once. Place 2 patties on
each pita; top with Watermelon-Feta Salad. If desired,
sprinkle with mint leaves. Fold over to eat.
TO TOTE: Prepare burgers and salad as directed. Cover and
refrigerate in separate containers. Tote to work in a
cooler bag. If desired, heat burgers before placing in
pita bread with salad.
Makes: 4 sandwiches
