Title: Chicken Caesar Burger

Yield: 6 Servings
1 1/2 lb Chicken; cut up
1 md Onion; cut up
1/4 c Grated Parmesan cheese
1/4 c Fresh Italian parsley
2 Anchovy filets; drained,
- patted dry
2 tb Olive oil
1/2 ts Kosher salt
1/4 ts Ground black pepper
6 Romaine lettuce leaves
3 md Roma tomatoes; sliced
6 Ciabatta rolls; split,
- toasted
1/2 c Shredded Parmesan cheese
1/4 c Bottled Caesar salad
- dressing
In a food processor combine chicken onion, grated
Parmesan cheese, parsley, and, if desired, anchovies.
Cover and process with several on/off turns until
coarsely ground and slightly sticky.
Shape into six 4" patties. Cover and chill for 30 minutes
or up to 24 hours.
Brush both sides of each patty with oil; season to taste
with salt and pepper. For a charcoal or gas grill, grease
grill rack of a covered grill. Grill patties directly
over medium heat for 8 to 10 minutes, turning once
halfway through grilling.
To serve, place a lettuce leaf and tomato slices on the
bottom of each roll. Top each with a chicken patty. Top
with shredded Parmesan cheese. Spread roll tops with
salad dressing. Place roll tops, dressing side down, on
burgers.
