    Title: St. Thomas Granny's Pound Cake

    Yield: 6 Servings

    1 c Butter
    2 c Sugar
    1 Lime; zested
    5 lg Eggs
    2 ts Vanilla essence
    3 c Flour
    1 ts Baking powder
    1 c Milk

    Set oven to 350ºF/175ºC.

    Cream sugar and butter Add eggs one at a time. Add grated
    lime peel and vanilla. Beat on low to mix ingredients
    well.

    Beat on high for about 5 minutes. Set mixer to low, add
    flour and baking powder alternately with milk. Beat well
    after each addition.

    Spoon batter into greased and floured 10" bundt pan.

    Bake for 65-75 minutes, until a pick comes out clean.

    Cool for 15 minutes; invert onto cake plate.

    Title: Gather Round Pound Cake
    Categories: Cakes, Desserts
    Yield: 9 Servings

    6 oz Pkg butterscotch morsels
    2 tb Instant coffee
    1/4 c Water
    1 c Butter
    3 c Flour
    1/2 ts Baking Soda
    1/4 ts Salt
    3/4 c Buttermilk
    4 lg Eggs

    Melt together in double boiler butterscotch morsels,
    coffee, and water.

    Cream together butter and sugar and add to butterscotch
    mixture. Combine flour, soda, salt and add to creamed
    mixture alternately with buttermilk. Add eggs one at a
    time. Beat at medium speed.

    Bake in greased 12-cup, 10" Bundt pan at 350ºF/175ºC for
    55-60 minutes. Cool 10 minutes before removing from pan.
