    Title: Chocolate Coquito

    Yield: 10 Servings

    1/4 c Unsweetened cocoa
    1 tb Instant coffee powder
    1/3 c Semi-sweet or dark chocolate
    - chips
    24 oz Evaporated milk; divided
    15 oz Can cream of coconut
    27 oz (2 cans) coconut milk;
    - unsweetened
    14 oz Can condensed milk
    1/2 c Kahlua or cream de cocoa
    1 1/4 c Coconut rum
    1 tb Cinnamon
    1 tb Vanilla extract

    In a sauce pan, mix the coffee, cocoa, and chocolate
    chips with 1 can of evaporated milk.

    Heat on medium and stir until chocolate chips melt
    together with cocoa and milk. Stir constantly.

    Into the pan, add the remaining can of evaporated milk
    with the cooled chocolate mixture.

    Blend together. Add the remaining ingredients except
    alcohol. ( You may omit alcohol if desired). If omitting
    alcohol, add more evaporated milk to make it less sweet.

    Mix until all combined well. Heat stirring until cream
    of coconut is blended in well. Cool. In batches in a
    blender mix with the alcohol. Mix about 1 minute. Pour
    batches together into a large bowl or kettle. Stir all
    together well. Pour in to a pitcher with cover or
    individual bottles with a funnel. Refrigerate up to 3
    weeks. This tastes delicious. It gets even better after
    2 - 3 days refrigerated. All of the ingredients meld
    together nicely.

    Title: Kahlua Chilli
    Categories: Beef, Vegetables, Chilies, Herbs, Booze
    Yield: 12 servings

    1/2 c Oil
    4 md Onions; peeled, chopped
    4 cl Garlic; minced
    4 lb Coarse ground chuck
    1 c Bell pepper; chunked
    1 c Kahlua
    1/2 c Parsley; chopped
    6 tb Chilli spice mix
    2 tb Tomato paste
    4 ts Salt
    2 ts Cayenne pepper
    2 ts Ground cumin
    2 ts Dried marjoram; crushed
    2 ts Dried oregano; crushed
    Cheddar cheese; grated, opt
    Chopped onion; opt
    Cooked spaghetti; opt

    In large pot, heat oil. Add onions and garlic; saute
    until transparent.

    Add meat; brown. Add remaining ingredients except cheese
    and onions; mix well. Bring to boil. Reduce heat and
    simmer, partially covered, for 45 minutes.

    To serve, spoon chilli on top of cooked, drained pasta
    in individual bowls and top with cheese and onions.

    Yield 5 quarts.
