Title: Marilla Cuthbert's Plum Pudding

1 c All purpose flour
1/2 c Sugar
1/2 c Fresh bread crumbs
1/2 ts Baking powder
1/2 ts Salt
1/2 ts Ground cinnamon
1/2 ts Ground nutmeg
1/2 c Butter
1/2 c Raisins
1/2 c Currants
1/4 c Chopped walnuts
1/2 c Milk
1/2 c Molasses
1 lg Egg

1/3 c Firm packed brown sugar
1/2 ts Salt
1 1/2 tb Flour
pn Salt
1 c Boiling water
1 tb Butter
1/2 ts Vanilla
PUDDING: Grease inside of pudding mould or bowl,
sprinkle with a bit of sugar. Shake mould until inside
surface is covered with sugar.
Dice raisins and currant, sprinkle with a little of
extra flour.
Mix flour, sugar, bread crumbs, baking powder, salt,
cinnamon, nutmeg into large bowl
Blend butter with blender under it looks like coarse
bread crumbs. Add chopped raisins, currants and walnuts
to flour mixture.
Pour 1/2 cup milk into small saucepan and place over low
heat. When tiny bubbles form around edge of pot, milk is
ready.
Break egg into small bowl, add it to fruit and flour
mixture. Add hot milk and molasses. Mix thoroughly.
Spoon mixture into pudding bowl. Cover with 2 layers of
aluminum foil, butter side of foil next to pudding.
Set canning rack in large pot. set covered pudding on
top. Fill pot with boiling water until it comes halfway
up the pudding mould.
Set large pot over high heat until water boils, turn
heat down to medium low and put the lid on. if
necessary, add more water during cooking.
Steam pudding for 3 hours. test if toothpick/fork comes
out clean. when pudding is done, remove and let stand
for 10 min.
Turn pudding upside down and serve warm with pudding
sauce.
PUDDING SAUCE: Combine sugar, flour and salt in small
saucepan.
Gradually add boiling water and stir over low heat stir
mixture until thick and creamy.
When sauce is thick, remove from heat. stir in butter
and vanilla. Pour on pudding.
