Title: Souffle Sardine Canapes

Yield: 8 Servings
1 cn Boneless, skinless sardines;
- crushed w/a fork
1 tb Mayonnaise
1/2 ts Sharp mustard
1/2 ts Onion; grated
1 Egg white; beaten stiff
Toast or Melba toast
Set the oven @ 400ºF/205ºC.
Mix the sardines thoroughly with mayo, mustard and onion.
Fold in the egg white and spread on 8 thin slices of
toast or packaged Melba toast, or on 16 small Melba
toast rounds.
Place on a baking sheet and bake 8 minutes. Serve
immediately.
