    October 9: National Submarine-Hoagy-Hero-Grinder Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Italian Grinders
    Categories: Breads, Pork, Cheese, Vegetables, Chilies
    Yield: 6 Servings

    2 (12") Italian sandwich rolls
    6 oz Capicola ham; thin sliced
    6 oz Mortadella sausage; thin
    - sliced
    4 oz Genoa salami; thin sliced
    4 oz Mozzarella; thin sliced
    1/2 c Chopped pepperoncini
    1 c Thin sliced red onion
    1/4 c Italian dressing

    To assemble the grinders, split the rolls in half
    lengthwise. Layer with the sliced meats, followed by the
    cheese, pepperoncinis and onion slices. Drizzle generously
    with the Italian dressing. Place top slice of roll on
    sandwiches. Cut each sandwich into thirds and wrap
    individually in plastic wrap. Refrigerate until packing
    for the picnic.

    Makes 6 servings

    Title: Julius Dithers Ball Buster Hoagy/Sub/Grinder
    Categories: Pork, Cheese, Sauces, Breads, Herbs
    Yield: 4 Servings

    MMMMM-------------------------MEATBALLS------------------------------
    2 lb Hot Italian sausage
    1/2 c Bread crumbs
    1/2 c Thin sliced green onions
    4 tb Grated Parmesan or Asiago
    2 lg Eggs

    MMMMM---------------------------SAUCE--------------------------------
    2 tb Extra-virgin olive oil
    4 cl Garlic; crushed and chopped
    1/2 ts Crushed red pepper flakes
    2 tb Flat-leaf parsley; chopped
    1/2 ts Dried oregano
    28 oz Can crushed tomatoes
    14 oz Can chunky style crushed
    - tomatoes
    Salt & fresh ground pepper

    MMMMM--------------------------ASSEMBLY-------------------------------
    4 Semolina crusty sub rolls;
    - sesame seeds optional
    2 1/2 c Shredded Provolone or
    - Italian 4-cheese blend
    Shredded sweet basil or
    - arugula leaves; garnish

    MEATBALLS: In medium bowl, add sausage, bread crumbs,
    onions, cheese and egg. Mix thoroughly. Shape into 24
    meatballs.

    Cook over med-low heat, turning frequently, until brown.

    5 MINUTE MARINARA: Heat a medium saucepan over medium
    heat. Add oil and garlic. When garlic starts sizzling,
    add herbs and crushed pepper. Allow oil to infuse for
    half a minute, then stir in the tomatoes and season sauce
    with salt and pepper. Bring sauce to a bubble, reduce
    heat, and simmer until meatballs are ready.

    ASSEMBLY: Combine meatballs and sauce and pile into sub
    rolls, 6 meatballs per sub. Top with shredded cheese and
    place under subs under broiler to melt cheese.
