Title: Gloucester Elvers (River Fish Cooked w/Bacon)

500 g Whole Elvers
8 sl Bacon
2 tb Lard or butter
4 lg Eggs; beaten
Salt & pepper
To clean the elvers, rinse in large bowls of cold water to
which a handful of cooking salt has been added. Drain and
pat dry.
Melt the lard or butter in a frying pan, add the bacon and
fry until crisp.
Remove the bacon, arrange on a serving dish and keep warm.
Continue to cook with the bacon fat in the frying pan. Add
the elvers to the frying pan and stir. Cook until the fish
turns white. Add the beaten egg, season and cook briefly,
stirring constantly, until the egg has just set.
Pour onto the serving dish with the bacon and serve.
