    Title: Chocolate-Chunk & Pecan Cookies
    Categories: Cookies, Snacks, Nuts, Chocolate
    Yield: 18 servings

    1 1/4 c Butter; softened
    3/4 c Dark brown sugar
    3/4 c Light brown sugar
    3 Eggs
    1 1/2 ts Vanilla extract
    2 1/3 c A-P flour
    1 ts Baking soda
    1/4 ts Salt
    12 oz Semisweet chocolate chunks
    2 c Chopped pecans

    Set oven @ 325ºF/165ºC.

    In a mixing bowl beat butter and both brown sugars until
    creamy. Add eggs one at a time, beating well after each
    addition. Stir in vanilla.

    Mix together the flour, baking soda and salt. Add to the
    butter mixture and stir just until combined.

    Mix in the chocolate chunks and pecans. Drop dough by
    rounded tablespoonfuls onto an ungreased cookie sheet.
    Flatten slightly with the back of the spoon.

    Bake about 15 minutes or until golden brown. Cool
    slightly on cookie sheet. Remove to a rack and cool
    completely.

    Title: Pecan Sandies Cookies
    Categories: Cookies, Snacks, Nuts
    Yield: 60 servings

    2 c Butter, softened
    1 c Confectioners' sugar
    2 tb Water
    4 ts Vanilla extract
    4 c A-P flour
    2 c Chopped pecans
    Add'l confectioners' sugar

    Set oven @ 300ºF/150ºC.

    In a large bowl, cream butter and sugar. Add water and
    vanilla; mix well. Gradually add flour; fold in pecans.

    Roll dough into 1". balls. Place on ungreased baking
    sheets and flatten with fingers.

    Bake 20-25 minutes or until bottom edges are golden
    brown. Cool on a wire rack. When cool, dust with
    confectioners' sugar.
