Title: Stuffed Acorn Squash

Yield: 2 Servings
2 Acorn squash; halved, seeded
- strings removed
500 ml Water
70 g Walnuts; chopped
100 g Red apples; diced
1 tb Cinnamon
2 tb Olive oil
Set oven @ 180ºC/360ºF.
Place squash hollow-side down in a baking dish. Add
water into the dish and bake for 20 minutes.
Meanwhile combine nuts, apples, cinnamon and oil in a
bowl. Mix well.
Take squash halves out from the oven and divide mixture
evenly among nearly cooked squash halves. Return to oven
for an additional 10 minutes or until stuffing is golden
brown.
