    Title: Mix & Match Baked Chicken Fingers & Dipping Sauces
    Categories: Poultry, Dairy, Herbs
    Yield: 4 Servings

    1 lg Egg; lightly beaten
    1/4 c Sour cream
    1/4 ts Salt
    1/4 ts Garlic powder
    1/4 ts Black pepper
    1 1/2 lb Skinned, boned chicken
    3 tb Oil
    Desired dipping sauces
    - (below)

    2 c Mini pretzel twists

    4 c Tortilla chips
    +=OR=+
    2 c Cheddar-flavored fish-shaped
    - or square snack crackers

    3 c Potato chips
    +=OR=+
    2 c Gardetto's Original Recipe
    - snack mix

    Place one of the above in a large resealable plastic bag; seal bag,
    pressing out air. Place bag on a cutting board and, using a rolling
    pin, crush to make coarse crumbs.

    Set oven to 400ºF/205ºC.

    In a medium bowl whisk together egg, sour cream, salt, garlic powder,
    and pepper. Cut chicken lengthwise into strips about 3/4" thick. Add
    chicken to egg mixture. Stir to combine.

    Brush a 15" x 10" x 1" baking pan with oil; set aside. Place desired
    Breading in a shallow dish. Transfer chicken, a few pieces at a time,
    to the dish. Roll and press chicken strips to coat all sides with
    Breading. Arrange chicken in a single layer in prepared pan, leaving
    space between each piece.

    Bake for 8 to 10 minutes or until chicken is no longer pink, turning
    after 5 minutes. Serve with desired Dipping Sauces.

    DIPPING SAUCES:

    TROPICAL BREEZE
    8 ounce can crushed pineapple; drained
    1/4 cup banana yogurt
    3 tablespoons shredded coconut
    2 tablespoons lime juice

    In a small bowl, combine pineapple; yogurt; coconut; and lime juice.

    SWEET & SOUR APRICOT
    1/2 cup apricot preserves
    2 tablespoons ketchup
    1 tablespoon rice vinegar
    1 tablespoon soy sauce

    In a small bowl, combine apricot preserves (snip any large pieces of
    fruit), ketchup, rice vinegar, and soy sauce.

    HONEY MUSTARD SAUCE
    1/4 cup mayonnaise or salad dressing
    1 tablespoon honey mustard

    In a small bowl stir together mayonnaise and honey mustard. Cover &
    chill.

    COOLED-DOWN MEXICAN SALSA
    1/2 cup salsa
    1/4 cup dairy sour cream
    1/4 cup shredded Mexican cheese blend

    In a small bowl, combine salsa, dairy sour cream, and Mexican cheese
    blend.

    KIDS BUFFALO STYLE
    1/2 cup ranch salad dressing
    3 tablespoons ketchup
    2 tablespoons fine crumbled blue cheese

    In a small bowl, combine ranch salad dressing, ketchup, and blue
    cheese.

    PIZZA PIZZAZZ
    3/4 cup pizza sauce
    1/2 cup Italian-blend shredded cheese
    2 tablespoons fine chopped pitted ripe olives

    In a small microwave-safe bowl, combine pizza sauce, cheese, and
    olives. Microwave on 100% power (high) for 1 minute. Stir; continue
    to microwave for 1 minute more, stirring after every 20 seconds,
    until heated through.

    Makes: 4 servings
