Title: Make-Ahead Beef & Udon Noodle Bowl

30 oz (2 pkg) refrigerated cooked
- beef tips w/gravy
2 c Fresh shiitake, cremini, or
- button mushrooms; sliced
2 c Shredded napa cabbage
1 c Sugar snap pea pods; halved
- diagonally
1 c Sliced onion
8 oz Can water chestnuts; drained
- chopped
2 tb Soy sauce
1 sm Serrano chile; seeded, fine
- chopped
4 cl Garlic; minced
1 Star anise
29 oz (2 cans) beef broth
1/2 c Water
15 2/3 oz (2 pkg) fresh udon (broad,
- white noodles)

6 oz Dried rice noodles
In a 1 gallon freezer bag combine beef tips with gravy,
mushrooms, cabbage, snap peas, onion, water chestnuts,
soy sauce, serrano pepper, garlic, and star anise.
Squeeze air from bag, seal, and freeze for up to 1 month.
To serve, in a 4 to 5 quart Dutch oven bring broth and
the water to boiling; add frozen ingredients. Return to
boiling; reduce heat. Simmer, covered, for 20 minutes.
Remove and discard star anise.
Meanwhile, prepare noodles according to package
directions, discarding any seasoning packets. Divide
noodles among bowls; ladle soup over noodles.
