    Title: Potato Pancakes

    Yield: 3 Servings

    6 lg Potatoes; grated
    3 Eggs; beaten
    1 tb Wheat germ
    1 tb Whole wheat flour
    1 sm Onion; diced fine
    1 ds Salt
    1 ds Soy sauce
    Oil; for frying
    Applesauce; yogurt, or
    -cottage cheese; for topping

    Potato pancakes are a hefty meal for fueling your engine before you
    begin a long day of touring (and they are guaranteed to get you at
    least 10 miles per pancake). They are also great for silencing
    growling bellies when dinnertime rolls around.

    Grate potatoes. Squeeze out water from potatoes with a paper towel or
    clean cloth. Mix potatoes, wheat germ, whole wheat flour, onions, soy
    sauce, salt, and eggs. Fry by spoonfuls onto hot, well-oiled frying
    pan. Top with applesauce, cottage cheese, or yogurt.

    6 lg Red-skinned potatoes
    1 lg Carrot
    1 lg Onion
    2 cl Garlic

    MMMM---------------------------MIX IN-------------------------------
    1 c Fine ground whole-wheat flour
    1 ts Salt
    1/4 ts White pepper
    4 lg Eggs
