• Crunchy Roasted Chickpeas

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Crunchy Roasted Chickpeas
    Categories: Snacks
    Yield: 1 Batch

    14 1/2 oz Can chickpeas
    2 tb Olive oil
    2 ts Salt
    1 ts Pepper
    1/2 Lemon; juice of
    1 ts Garlic powder
    1/2 ts Paprika powder
    2 tb Nutritional yeast

    Preheat the oven to 400 F.

    On a baking sheet lined with parchment paper, toss chickpeas with
    olive oil, salt, pepper, lemon juice, garlic powder, paprika, and
    nutritional yeast, ensuring the chickpeas are well coated.

    Place in the oven and roast for 25-30 minutes until crispy.

    Let cool and enjoy!

    Tip: Add a handful to your salad as a nourishing substitute (or
    addition) to croutons.

    Made these (pretty much same recipe) last week as I was looking for a
    different snack. Both Andrea and I loved them.

    Last night was a 10 minute cooking night we had curry chickpeas.

    I fried a large onion, small green pepper (I'd add more next time),
    mushrooms, garlic, ginger in olive oil. added a large tablespoon of curry paste from a jar, bit of water drained and rinced can of chickpeas. Cook
    until the water is gone and eat over rice.

    Not a orginized recipe but that's pretty much it. Takes longer to say
    then it does to make. :)

    I have not tried to make them yet, but my sister served them to me once and
    i liked them. Your 10 minute curry chickpeas recipe reminds me that i saw chickpeas in the pantry.. i ought to make a chickpea curry in the crockpot.
