    Title: Apple-Cheddar Strudel

    6 md Cooking apples
    1 c Cheddar cheese; grated
    1/2 c Honey
    1/2 c Walnuts; chopped
    1 ts Cinnamon
    1 Lemon; rind and juice of
    1 ds Salt
    1/2 c Fine bread crumbs
    1/2 c Raisins; (optional)

    1/2 c Butter; melted
    1/2 c Wheat germ
    10 Strudel leaves

    Preparation time: 1-1/4 hours (including baking time)

    Combine filling ingredients. Pre-heat oven to 375 F.

    Assemble two rolls, using five leafs for each.

    Lay down two leafs of strudel one fully covering the other (use a
    clean wooden or formica surface), stretching out lengthwise away from
    you. Butter the top liberally and gently, using a pastry brush.
    Sprinkle lightly with wheat germ. Add two more leaves and repeat the
    buttering and sprinkling and layering until all 5 leaves lie
    assembled before you in a neat pile.

    For each roll, apply the filling at the end closest to you, and roll
    up, away from you, tucking in the sides.

    Carefully lift each roll (using spatulas to help you, if necessary)
    and place it on a buttered tray. Brush the top with butter. If
    desired, you can sprinkle extra wheat germ on top of the rolls. Make
    several diagonal slashes, cutting (with serrated knife) through the
    top layer of dough to the filling. Bake 30 to 35 minutes--until
    golden and crisp. Cut it using a serrated knife and a gentle sawing
    motion. Serve warm or cold with ice cream or whipped cream.
