Title: Cucumber Soup

Yield: 3 Servings
1/2 Onion; chopped
1 1/2 lg Cucumbers; peeled; chopped
1 sm Red pepper; chopped
3 c Veggetable broth
Black pepper; lots and lots
Yogurt
Cilantro; for garnish;
-(optional)
Cook onions, cucumbers, peppers until soft (1 hour). Add broth and
pepper, stir, cover, simmer for 10 minutes. Puree. Bring to simmer,
cook 5 minutes. Top with yogurt, cilantro.
