    02 August 1343 - A HUSBAND'S EXECUTION SETS HIS WIFE ON A NEW CAREER:
    Olivier de Clisson is beheaded in Paris after being found guilty of
    treason in a controversial trial, and his wife Jeanne de Clisson will
    take her revenge on the French king by raising her "Black Fleet" and
    becoming an impressively successful pirate plying the English Channel,
    hunting down French ships.

    Jeanne was also also known as Jeanne de Belleville and the Lioness of
    Brittany, was a French / Breton former noblewoman who became a privateer
    to avenge her husband after he was executed for treason by the French
    king. She crossed the English Channel targeting French ships and often slaughtering their crew. It was her practice to leave at least one
    sailor alive to carry her message of vengeance to the King of France.

    Title: Pirate's Pride Burger

    Yield: 6 servings

    MMMMM---------------------------BURGER--------------------------------
    2 lb Ground chuck (85/15)
    1 lb Ground round (90/10)
    1 ts Worcestershire sauce
    1 ts (ea) salt & pepper
    2 oz Butter; melted

    MMMMM------------------------BACON WEAVE-----------------------------
    24 oz Pkg smoked bacon
    1 lb Box dark brown sugar
    1 tb Red pepper flakes

    MMMMM-----------------------PIMENTO CHEESE----------------------------
    8 oz Extra sharp cheddar cheese
    8 oz Pepper jack cheese
    8 oz Monterey jack cheese
    4 oz Cream cheese
    1/2 c Mayonnaise
    3 tb Pimentos w/juice
    1/2 ts Onion powder
    1/2 ts Garlic powder
    2 ts Mrs. Dash (original)
    1/2 ts Red pepper or hot sauce

    MMMMM--------------------------TOPPINGS-------------------------------
    Steak sauce or HP sauce
    Mayonnaise
    Bibb lettuce leaves
    Tomato slices
    Red onion; sliced thin
    Dill pickle sandwich slims

    BACON WEAVE: Set oven @ 425-|F/218-|C.

    Foil line 2 large cookie sheets and add 2 metal cooling
    racks to the cookie sheets. Use zip lock bag and add box
    of dark brown sugar, set aside.

    Take 3 slices of bacon and cut in half, you now have 6
    small sections of bacon to work with. Put the small
    bacon sections in the brown sugar bag and coat bacon
    very well.

    Take the 3 slices of bacon and run them horizontal on
    the metal cooling racks, then take 3 more slices of
    sugar coated bacon and weave vertically with the
    horizontal strips. You are basically building a woven
    bacon blanket. This may sound complicated but after you
    complete the first the rest are a breeze.

    Continue with bacon repeating the same steps until you
    have 6 bacon weaves. Sprinkle each bacon weave with red
    pepper flakes before baking.

    Bake in oven for 30 minutes or until bacon is done.
    While bacon is baking move on to pimento cheese recipe.

    NOTE FOR TIME SAVING: Make bacon weave and pimento
    cheese the day before and store in refrigerator. Warm
    bacon in microwave before serving on burgers.

    PIMENTO CHEESE: Using food processor shredded the three
    packages of block cheeses. Set aside.

    In large mixing bowl add mayo, cream cheese, pimentos
    and spices. With electric hand mixer blend together
    until smooth. Add the shredded cheeses to the mayo
    mixture and mix well. Refrigerate until ready to put
    on burgers.

    BURGERS: Fire up grill to at least 325-|F/165-|C.

    In large mixing bowl combine the 3 pounds of ground
    beef, Worcestershire sauce, salt and pepper. Form 6
    burgers into large 7 oz burger patties.

    Place burgers on grill. Cook on one side 10 to 12
    minutes, before turning baste with melted butter. Turn
    burgers and cook until medium to medium well or at least
    160F internal temperature.

    Just before taking burgers off grill add large dollop of
    pimento cheese mixture and let melt. Remove burgers and
    serve on buttered toasted buns.

    Assemble burger as bottom bun, lettuce, onion, burger,
    bacon weave, steak sauce, tomato, and sliced dill
    pickles. Add mayo or steak sauce to bun top.

    Serves 6.
