    Whoever established our front yard dumped a lot of cheap fill dirt on
    it. Steve has found a good number of pieces of broken glass, don't
    know how many golf balls and other assorted junk in it, especially in
    the first few years we lived here.

    We've stayed at Cracker Barrel, also Flying J and Pilot truck stops.
    Down side to the truck stops is that the trucks are in and out all
    night plus they play music outside all night. Not condusive to a good night's sleep. Cracker Barrel usually has an RV lot out back, "fun"
    part there is the POV's that think it's also parking for them. The
    R-Pod and truck took up just 2 spaces front to back; the ew set up will take a bit more.

    What do you mean by POV?

    This looks like something that the two of you might like -- with
    suitable modifications. I notice that it just says "boneless chicken",
    so that could be breasts or thighs.

    Title: Crockpot Jerk Chicken
    Categories: Testing
    Yield: 2 Servings

    1 lg Onion, cut into 1/8
    1 ts Ground ginger
    1 ea Serrano pepper (or hotter)
    (seeded/finely minced)
    1/2 ts Ground allspice
    2 tb Dry mustard
    1 ts Fresh ground black pepper
    2 tb Red wine or balsamic vinegar
    2 tb Soy sauce
    3 ea Cloves garlic, crushed
    2 lb Boneless chicken, cut into
    - 1 1/2 inch chunks

    Combine onion and ginger in food processor, process until finely
    chopped. Add remaining ingredients except chicken and pulse until
    well blended.

    Spray inside of 1 1/2 quart crockpot place chicken in crockpot, spoon
    sauce mixture over meat. Mix so all chicken is covered.

    Cook on LOW for 4 hours.

    Tested using balsamic vinegar - will try red wine vinegar next.

    Looks strange during cooking, but if you stir chicken a couple of
    times close to the end of cooking time, everything comes together.

    Chicken was tender, flavorful. Sauce mixture is brown with a hint of
    spice and heat. Might try upping to hotter pepper next time.

    Will make again.

    Tested 4/08

    Original recipe was with 3 to 4 lbs of chicken tenders using the same
    amount of sauce mixture as shown above. If using chicken tenders
    recipe suggests cooking on Low 6 - 8 hours or on High 3 - 4 hours.
    Use larger crockpot if using that amount of chicken. I might suggest
    to double the sauce ingredients as well.

    We've not found a tire--yet. I think most of the junk was out of our
    yard before we bought the house since the house had been built 22 years
    before. I don't know how many prior owners it had, never did trace the
    deed. The family prior to us raised chickens and some of the older
    neighbors still remember the coops. An old Google Earth picture shows
    them but those pictures are harder to find since we've owned the place
    for almost 9 years now.

    Any cut of chicken--we usually buy boneless breasts or thighs, depending
    on what I'm making and what's on sale.
