    Apparently I am breathing better. My oxi-meter is showing mid-90s
    without having the concentrator turned on and the cannulae up my snoot. That's a good thing. Initial set-up setting on the concentrator was 6

    really needs them.

    6 l/m is a pretty strong concentration. Your lungs must've been
    congested like New York City traffic. I'm glad you're doing better.

    Even with my heart issues, my oxygen blood levels are around 97-98.
    Just had a pre-op appointment with a nurse at the VA concerning an endoscopy/colonoscopy procedure I am due to have on June 2. She
    listened to my heart and said it sounded really good for someone who
    had two heart attacks.

    An that's another. I'm about due for a Wazoo-Look anyway and with the
    amal bleeding that put me back on sick call .... it's time to suck it
    up and git 'er done.

    I see my cardiologist tomorrow. They may still delay that procedure because of that saddle PE I had last November.

    That was caused by a DVT that went "walk-about" wasn't it?

    I realized today that I never put a "Lunch" category in my MM. Oops. Fixed now.

    I've never had any "meatime" categories in my Meal Muncher. I eat what ever/when ever. One of my pet-peeves with the Fats Food burger snatchers
    is their brief period when the had "breakfast anytme".

    I enjoyed baing able to order from their (abbreviated) menu of typical breakfast items between 11 ayem and close of business. 'Cause sometimes
    you're not up for burgers and fries - but a couple burritos and a hash

    Title: Breakfast Burrito
    Categories: Chilies, Eggs, Cheese, Pork
    Yield: 4 Servings

    4 (8") flour Tortillas
    6 lg Eggs
    1 ts Buttermilk
    Salt & Pepper
    4 oz Good breakfast sausage; bulk
    2 oz Shredded Cheddar cheese
    1 sm Onion; chopped
    1 sm Red bell pepper; seeded,
    - chopped
    4 oz Can chopped green chilies;
    - drained

    Saute bell pepper and onion until soft. Add drained
    green chilies to the mix. Set aside.

    Cook sausage, stirring around to break up into crumbles.
    Do not overcook. Set aside, reserving sausage grease in
    skillet.

    Scramble eggs in sausage grease until set but not hard
    or dry. While cooking eggs nuke the tortillas for 15 to
    30 seconds to warm and soften.

    Spread scrambled eggs on warmed tortilla. Top with 1/4
    of the sausage, pepper/onion/chile mix and cheese.

    Wrap tortilla into a burrito. Nuke to melt cheese if
    you think it necessary. If serving as finger food you
    can serve now. If serving on plates with silverware
    you can smother with chile verde if you like. Serve
    salsa on the side.

    get American citizenship. He told me that "growing old is a privilge that
    not many have".

    Me too! There are a few places like Jack In The Box and Bojangles where you can order breakfast any time. Of course, more upscale places like IHOP and Denny's are a good choice if you're famished. :D

    Title: Gulf Coast Seafood Gumbo with Rice

    1 sl Bacon; chopped
    2 tb All-purpose flour
    1 lg Onion; chopped
    1 md Red bell pepper; cut in 1/2"
    -dice
    1 md Green bell pepper; cut in
    -1/2" dice
    1 ts Minced garlic
    3/4 ts Salt
    1/4 ts Freshly ground pepper
    1/4 ts Thyme
    1/8 ts Ground red pepper; to 1/4
    -teaspoon
    1 cn Low fat chicken broth; plus
    -water to =3 cup
    1 c Sliced frozen okra
    1 c Chopped; drained canned
    -tomatoes
    1 c Chopped green onions
    1 lb Red snapper or catfish
    -fillet; cut in 1 1/2"
    -chunks
    8 oz Medium shrimp; peeled and
    -deveined
    3 c Cooked brown rice

    Cook bacon in heavy Dutch oven over medium heat until crisp. Drain on
    paper towels. Reduce heat to medium-low. Stir flour into drippings
    and cook, stirring frequently, until mixture is deep golden brown,
    about 12 to 15 minutes. (Be careful not to burn.) Stir in onion,
    diced peppers, garlic, salt, pepper, thyme and red pepper. Cover and
    cook, stirring occasionally, until vegetables are tender, 10 minutes.
    Gradually stir in broth, then okra, tomatoes and green onions. Return
    to simmer and cook, covered, until mixture is thickened and
    vegetables are tender, 10 to 15 minutes. Stir in snapper and shrimp;
    cook 5 minutes more. Stir in bacon. Serve over cooked rice. Makes 6
    servings.

    NOTES : All you need is one slice of bacon to capture the smoky flavor
    typical of this zesty fish stew. Prep time: 20 minutes Cooking time:

    Title: Crockpot Beef Stroganoff for 2
    Categories: Crockpot, Easy, Tested
    Yield: 2 Servings

    1 lb Round steak - med cube
    1/4 c Onion, med dice
    1 cn Golden mushroom soup
    4 oz Fresh sliced mushroom
    1/8 t Pepper
    1/4 c Sour cream (see note)
    1/4 c Cream cheese (see note)
    1 1/2 c Hot cooked noodles

    NOTE: You can use all sour cream or all cream cheese if that is what
    you have.

    Cut beef into thumb tip to first knuckle size cubes.
    [or very thin slices would work as well]

    Using 1 1/2 quart two level heat control crockpot (3 1/2 quart if
    doubling recipe) place beef, onion, soup, mushrooms and pepper. Mix
    everything together well.

    Cover and cook on LOW heat setting for 8 to 10 hours or until beef is
    very tender. (at 7 hour mark stir in cream cheese if using). When
    beef is totally tender, stir sour cream into beef mixture. (If using
    only cream cheese add at 7 hour mark)

    Serve over noodles.

    Tested by doubling recipe 10/1/1

    Turned out very good. Nice sauce. Meat was tender and not falling
    apart, mushrooms still had a bite to them.

    wash. They've put up a La Qinta motel just off of Route 66 here. I keep

    IHOB (burgers). And their pancakes never were "best in class", But,
    then, nothing at IHOP were was. Plus they've jacked around with their
    "senior menu"

    Title: Dent-Knees Chicken Fried Steak
    Categories: Beef, Wine, Breads
    Yield: 4 Servings

    4 Cubed steaks
    Corn oil
    Seasoned salt *
    3 tb Lambrusco red wine
    +=OR=+
    3 tb Juice
    2 c Bisquick
    1/4 lb Butter; melted
    1/3 c Cooking oil
    Seasoned salt & pepper

    The night before, put the steaks in a dish in single
    layers. Wipe them on both sides with an even coating of
    corn oil. Dust them on both sides with a generous amount
    of seasoned salt.

    Drizzle each steak with wine. Seal the dish in doubled
    foil or plastic wrap and refrigerate it for about 24 hr
    prior to preparing the final dish.

    Remove the steaks from the fridge and coat both sides
    well in the bisquit mix.

    Combine the butter with the oil in a large skillet until
    melted. Brown both sides of each steak, till crispy.
    Transfer right back to the same baking dish and seal in
    foil. Bake at 375ºF/190ºC about 30 minutes.

    Not only do we all have to eat but deal with age and health problems, sigh.

    For my part, I have not been doing a lot of cooking lately but I am trying
    to eat more healthy. I am hoping to get a set of teeth this year so I can start enjoying my broccoli, asparagus, and artichokes again.

    Title: Cornmeal Griddle Cakes
    Categories: Breakfast, Side dishes
    Yield: 16 Servings

    1 c Water
    1 1/4 c Plus 3/4C Milk
    1 tb Sugar
    1/2 c Yellow cornmeal
    1 c Flour
    1 1/2 ts Baking powder
    1/2 ts Salt
    1/4 c Butter - melted
    2 lg Eggs - slightly beaten
    1 ts Oil - optional

    Place water, 1 1/4C milk and sugar in heavy bottom medium saucepan and
    bring to a simmer. When liquid just comes to a simmer slowly sprinkle
    in cornmeal, whisking continuously, so no lumps form. Slowly simmer,
    stirring frequently adjusting heat as necessary to prevent
    splattering, until cornmeal is cooked and tender, about 4 minutes.
    Pour into large bowl to cool to room temperature; stirring
    occasionally to prevent skin from forming.

    Meanwhile, sift together flour, baking powder and salt in small bowl.
    Set aside.

    When cornmeal mixture has cooled stir in melted butterr and eggs,
    mixing until smooth. Stir in flour mixture. Stir in remaining 3/4C
    milk. Batter should be fairly smooth.

    Heat griddle over medium heat until water drops splatter. If not using
    non-stick griddle brush lightly with oil. For each pancake, ladle 1/4c
    batter onto heated griddle and cook until pancakes turn lightly puffy
    and a couple of bubbles appear on surface, (this type of pancake has
    few bubbles compared to regular ones) and underside is lightly brown.
    Turn and cook on other side.

    NOTES: Make sure cornmeal is completely cooked. To test, taste small
    amount to be sure it is tender and has no crunch to it. You could
    also replace half of melted butter with melted strained bacon fat.

    It's like the Dollar General "seeds" I see here all the time (huge mounds of dirt where a new DG is going up). There's not a Denny's within a 150 mile radius of my area and I have no clue why. With two busy Interstates intersecting nearby (I-26, which I live about two miles away from, and I-81 which hits I-40 about 70 miles west of me), I'm surprised there isn't one already.

    IHOB (burgers). And their pancakes never were "best in class", But,

    2 c Seasoned croutons
    4 oz Cheddar cheese; shredded
    4 Eggs; slightly beaten
    2 c Milk
    1/2 ts Prepared mustard
    Bacon; crisp and crumbled

    In bottom of buttered Pyrex dish, combine croutons and cheese. Mix
    remaining ingredients, except bacon, and pour over crouton/cheese
    mixture. Sprinkle bacon crumbles on top. (May be prepared in advance

    Title: Summer's Best Peach Crumble (Cracker Barrel)
    Categories: Five, Fruits, Breads
    Yield: 8 servings

    20 oz Frozen sliced peaches;
    - thawed, drained
    6 tb Brown sugar
    1 c Coarse crushed cinnamon
    - graham crackers
    3 tb Butter; melted

    Set oven @ 375ºF/190ºC.

    Coat an 8" square baking dish with cooking spray.

    Combine peaches and brown sugar in prepared baking dish.

    In a small bowl, combine graham cracker crumbs and
    butter. Sprinkle graham cracker topping over peaches and
    bake 30 to 35 minutes, or until peaches are hot and
    bubbly. Serve warm.

    Hmmmmmmmm .... I don't have my last C-Pap but I do have the manual that
    came with. (after a brief search) It was a ResMed with a port for oxygen
    to be added to the air-stream via tank or concentrator. Never used that feature. And quit the C-Pap when the apnea left off ... after I slimmed
    down and wrung a lot of excess water out my body.

    Title: Shrimp & Broccoli (sort of) Alfredo
    Categories: Seafood, Sauces, Pasta, Cheese
    Yield: 4 Servings

    8 oz Uncooked linguine or
    - spaghetti
    1 c Broccoli florets
    2 tb Butter
    1 lb Tail-off cooked shrimp
    10 3/4 oz Can cream of mushroom soup
    1/2 c Whole milk
    1/2 c Grated Parmesan cheese; plus
    - more to sprinkle at table
    1/4 ts Pepper

    Cook linguine according to package directions. Add
    broccoli to cooking water for the last 4 minutes of
    cooking time; drain.

    In a medium skillet, over med-high heat, melt butter.
    Add shrimp and heat, stirring, until shrimp are heated
    through. Add soup, milk, cheese, pepper & the linguine
    mixture. Heat through, stirring occasionally.

    Serve with additional cheese.

    Makes 4 servings

    Nope, nothing there yet. There IS a Cracker Barrel north of town right off
    of I-26, across from Waffle House. <G>

    We've three WHs here; one a short drive north of me (3 miles) and one west of me (4.4 miles), and the one across from CB (6.6 miles). They're all really good places especially the far-north one. I like to go around 9-10 AM.
    Past the breakfast rush hour. I do admit to enjoying going to a WH around

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Cracker Barrel Hash Brown Casserole
    Categories: Copycat
    Yield: 6 Servings

    2 lb Frozen hash potatoes; thaw
    1/2 c Margarine; melt
    1 ts Salt
    1/2 ts Black pepper
    1/2 c Onion; chop fine
    1 cn Cream of chicken soup
    2 c Colby cheese; grated

    Preheat oven at 350F. Spray a 9x13 baking pan with non-stick
    cooking spray. Combine soup, margarine, salt, pepper, onions and
    cheese. Gently mix in the potatoes and pour into prepared pan or
    dish. Bake uncovered at 350F for 35 minutes.
