    I think I've shrunk a bit over the years. Noticed that when I was
    trying to get something from the top shelf of my spice cabinet (yes,
    I've got a whole cabinet devoted to them) a while back. Had to get the little one step stool I keep in the kitchen to get the crushed red
    pepper. I also keep a one step stool in my sewing room to get to the closet shelf.

    Shrinking as we age seems to be a universal given. I've shrunk an inch
    and Gail perhaps two.


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Bavarian Chicken Schnitzel
    Categories: D/g, Chicken, Boat
    Yield: 4 servings

    4 Chicken breasts, boneless;
    Skinless; (about 1 1/2 lbs)
    1/2 ts Salt
    1/2 ts Pepper
    1 1/4 c Bread crumbs, unseasoned
    1 tb Parsley OR varied spices
    1 tb Grated rind of lemon
    2 tb Water
    2 Eggs
    1/2 c Flour
    3 tb Butter
    3 tb Oil
    1 Lemon; thinly sliced
    -(optional)

    This dish can be made from chicken, veal, pork and beef.

    1. Place chicken between sheets of wax paper, pound with
    smooth side of meat mallet or pan bottom to 1/4 inch
    thickness. Sprinkle with salt and pepper. Cut each
    flattened breast crosswise into 2 or 3 pieces.

    2. Stir together crumbs, parsley and lemon rind in shallow
    dish. In separate dish, lightly beat eggs and water.
    Place flour in another dish.

    3. Coat each piece of chicken lightly with flour, shaking off
    excess. Dip into egg mixture to coat, then bread crumbs to
    coat well, shaking off excess. Place on tray or between
    sheets of wax paper. Chill at least 15 minutes or up to 2
    hours to set coating.

    4. Heat 1 1/2 Tbls of butter and oil in large skillet. Cook
    chicken over medium high heat, a few pieces at a time, 2 or
    3 minutes per side or until browned. Add more butter and
    oil as needed. As pieces brown, remove to platter and keep
    warm.

    Vary spices to make Mexican, Indian, Italian

    SERVES 4

    so after she retired from the school library, she brought home (with the school's OK) the step stool she used there. It had wheels, but they
    locked once she put weight on the step. She used it in her kitchen but eventually traded it in for a 2 step stool with a grab bar. We've got
    one of the latter; good for reaching the topmost shelf in our pantry.

    One of our favorites--I usually bake it. I do the coatings, then put in
    a glass pan sprayed with non stick, spray some more on top and bake at
    350 for 15 minutes or so. Works good with turkey cutlets too.

    Title: Macaroni Salad (new)
    Categories: D/g, Boat, Pasta, Salads
    Yield: 4 Generously

    2/3 c Macaroni, raw elbow or twist
    1/3 md Onion; chopped (1/4 cup)
    1/3 c Celery; chopped
    4 oz Cheese, cheddar; cubed
    USE KRAFT EXTRA SHARP
    YELLOW CHEESE
    1/2 c Mayo (perhaps tad more)
    1/2 ts Mustard, yellow
    15 oz Can kidney beans, drained d
    Rinse kidney beans

    MMMMM----------------------------NOTE---------------------------------
    USE DARK RED OR BROWN
    KIDNEY BEANS - DO NOT USE
    WHITE KIDNEY BEANS
    1 ts Dried Dill Weed or to taste
    (Used 2 ts or more)
    3 lg Eggs hard boiled, sliced
    (Last time used 2 eggs)

    MMMMM--------------------------OPTIONAL-------------------------------
    2 oz Spam, cubed
    I usually omit the Spam

    Boil macaroni according to box until done, drain. Place in LARGE
    MIXING BOWL.

    Hard boil eggs - peel. Sliced (use egg slicer or sharp knife) Set
    aside.

    Medium dice onion and celery - set aside.

    Cube Cheddar cheese into 1/4 inch cubes (about the size of the kidney
    beans)

    Drain rinse kidney beans. Set aside.

    Mix all cooked macaroni, onion, celery, cheese, drained kidney beans
    in large bowl, add Mayo and mustard along with dill weed. Mix well.
    At the end sliced eggs and mix in gently.

    Taste for final touches and refrigerate. Might need to add a little
    more mayo or mustard or dill weed. Add a little at a time if needed.

    Variation of recipe for 12 #130 in data base.

    From the looks of it, it would probably feed 6-8 comfortably. Yesterday
    after church we went over to our favorite Korean place with the 2 young
    men we had the Mexican meal with last week. Also joining us was a former member, now studying in Jerusalem but home on break. The I think one of
    the 3 young men had had bulgogi before (he ordered it again) but none of
    them had ever had a seafood pancake. We split one as a table appetiser.
    One guy got fried rice, another one a noodle bowl, I got jap jae with
    shrimp and Steve got a hot stone shrimp bowl. None of us finished our
    entrees; 3 of us took them home for another meal. A good time was had by
    all and they enjoyed their introduction to a new cuisine.

    Title: Beef Teriyaki And Rice
    Categories: Beef, Chicken, D/g, Chinese, Japanese
    Yield: 2 servings

    3 tb Soy sauce
    1 tb Dry sherry
    2 ts Brown sugar
    1 1/4 ts Garlic powder
    1 ts Ground ginger
    3/4 lb Flank steak strips Or
    Chicken breasts
    1 tb Oil
    3 c Bite size vegetables *
    1 c Beef broth
    4 ts Cornstarch
    Water to thin sauce if
    Necessary

    *Three cups of veggies - suggest slant cut carrots, green onions,
    green or red pepper chunks, a few pea pods if you have them.
    Mix soy sauce, sherry, brown sugar and seasonings. Add beef or
    chicken. Let stand 10 minutes to marinate.

    Stir fry meat in hot oil in wok until browned, remove. Add
    vegetables. Stir fry until tender crisp. Mix broth and cornstarch,
    add to wok. Bring to boil, boil 1 minute. Replace meat to wok to
    coat.

    Serve over rice.

    The side rail is on the step stool. We also have a step ladder outside
    that can be used for even more higher reaches but I generally leave that
    for Steve.

    Working on a boat can work up an appetite, and young folks tend to have
    a hefty one anyway. When we had teens in our small group at church, I'd
    figure on about 2 dozen servings for 18 people. We're down to one teen
    and half a dozen adults so I figure on cooking for 8-10 people.
    Sometimes I have left overs, sometimes I don't.

    This looks like it would serve four better than two, even given
    only DS> 3/4 pound of protein.

    Most Asian meals use a minimal amount of protein. I thought I'd not had
    a lot of protein yesterday but adding it all up, I had a fair amount.
    Had a ham biscuit and yogurt for breakfast today so that was a healthy
    amount of protein to start the day.
