    I am curious about the National Cooking picnic. I seem to recall that
    you mentioned going to one in 2007. Who organizes these picnics?
    Where are they normally located?

    We used to try to have a picnic each year. Covid put the brakes on
    that, as did the death of two of our more prolific posters who had
    hosted several each. The picnics were hosted by anyone who volunteered
    to do so. Given the number of echo members, they are usually at the
    house of the host these days, or sometimes at a nearby park.

    Title: Motorcycle Club Hot Dog Picnic Casserole
    Categories: Beans, Pork, Beef, Vegetables
    Yield: 8 Servings

    1 lb Hot dogs; in bite-size pcs
    2 lb Pork n beans; well drained
    3 sl Bacon; cooked, crumbled
    2 tb Bacon drippings
    1 md Yellow onion; chopped
    1 md Bell pepper; cored, chopped
    3/4 c Catsup
    2 1/2 tb Brown sugar
    2 tb Worcestershire sauce
    Salt & pepper

    Grease a 1 1/2 quart casserole.

    Add hotdogs, beans and bacon. Mix and set aside.

    Combine bacon drippings, onions and pepper in a heavy
    skillet and cook over medium heat five minutes or till
    lightly browned.

    Add remaining ingredients. Mix until well blended.

    Pour over hot dog mixture and mix well.

    Cover and bake for 1 hour @ 350ºF/175ºC.

    Serves 8

    Title: American Pepper Steak Stir Fry
    Categories: Beef, D/g, Stirfry, Boat
    Yield: 4 servings

    1 1/2 lb Boneless sirloin steak
    -MARINATE MIX
    1 tb Oil
    1 ts Corn Starch
    1 ts Salt
    1 tb Soy sauce
    1/4 ts White pepper
    -VEGETABLES
    3 sm Fresh tomatoes
    1 md Onions
    2 md Green peppers
    -SAUCE MIX
    1 cn Beef Broth (Undiluted)
    2 tb Corn Starch
    2 tb Soy sauce
    1 ts Sugar

    Trim fat from beef; cut beef along grain into 2 inch strips. Cut
    strips now across grain into 1/8 inch wide slices. In bowl toss beef
    with marinate ingredients. Refrigerate at least 30 minutes

    Cut each tomato into 8 wedges. Slice green peppers into 1 inch
    pieces, no more that 1/4 inch thick. Cut onion into small
    wedges.

    Mix Sauce ingredients: beef broth, corn starch, soy sauce and
    sugar. Set aside.

    Heat wok on Medium High until hot. Add 3 tablespoons of oil,
    spread around to coat pan surface. Add onion, 1/4 teaspoon
    ground ginger, 2 cloves minced garlic to wok. Stir fry until
    onions and garlic are golden brown. Add green pepper strips and
    stir fry.

    Remove Vegetables.

    Add 2 Tablespoon oil to wok, add beef strips and stir fry until
    meat is browned. Add cut up tomatoes for 1 minute, continue
    stirring

    Remove beef and tomatoes from wok.

    Place sauce mixture from above into wok. Heat and stir
    until thickened on medium high heat. Add meat and vegetable mixture
    into thickened sauce, stir, serve over rice.

    Serves 3-4

    Never understood that myself. I will, if there is a substantial fat cap
    trim it. And if it's beef use it as tallow/suet after putting it through
    the grinder. Fat carries flavour. I generally don't ditch the fat when
    I'm cooking unless there is an "excess" or I think iot will get in the
    way of the texture. Even then I tend to recycle/reuse it.

    Title: Dirty Dave's Chilli Popcorn
    Categories: Five, Snacks
    Yield: 1 Batch

    1/4 c Chilli oil/grease *
    1 c Unpopped popcorn
    Salt

    * The orange oil you spoon off of your chilli that is
    excess to the needs of a good bowl of red. Save it in
    the icebox until needed. When it has cooled/set up it's
    "grease". Bv)=

    Melt the chilli oil in the popping vessel. **

    When the grease is hot enough (350ºF/175ºC or more) add
    the unpopped kernels of popcorn. Shake pan occasionally
    to prevent sticking and burning.

    When popping has stopped pour into a bowl or paper bag,
    add salt to taste and enjoy!

    ** NOTE: air poppers will not work for this. A 'Stir-
    Crazy' popper works well - and you don't have to shake
    the pan.

    Have plenty of napkins handy. That orange chilli-flavored
    popcorn will stain your shirt or pants if you wipe your
    fingers on them.

    If you made HOT chilli - you will have very spicy popcorn.
    If you made a milder batch of chilli you will have nicely
    chilli-flavoured popcorn with a moderate bite.

    It is! It becomes a cacaphony of cuisines and tasting. People cooking in your kitchen (all were polite and cleaned up). It's common to have some limited ability to have a few guestrooms. Michael Loo stayed in my back bedroom for example.

    All hope is not lost for another one.

    Title: Mock Beef Strognauff
    Categories: Cambell's, Easy, Tested, Quick
    Yield: 4 Servings

    1 lb Boneless sirloin,
    2 ts Oil (divided)
    1/4 c Water (to deglaze)
    1 md Onion, chopped
    1 cn Golden Mushroom Soup
    1 sm Can sliced mushrooms drained
    1/2 ts Paprika
    1/2 c Sour cream
    4 c Cooked noodles

    Slice beef into very thin strips - about 1 1/2 inch long.

    Start cooking noodles in boiling water.

    NOTE: Meat part of dish takes less than 15 minutes to complete.

    Heat half the oil in skillet over medium high heat, cook beef until
    browned, stirring often. Set beef aside.

    Delaze pan with a small amount of water.

    Add remaining oil in pan, add onion and cook until tender.

    Add Soup, drained mushrooms and paprika into fry pan. Heat to a boil.
    Stir in sour cream and mix into soup well - return meat into the
    skillet. Heat through.

    This is okay - will make again.

    Our days of being able to host a picnic are indeed over. I think that
    we might be able to drive to one if not too far. We both are limited in
    our walking distance which would eliminate some types of side trips for
    us.

    Title: Grilled Taco Chicken
    Categories: Easy, George grill, Chicken, Tested
    Yield: 2 Servings

    1 tb Taco seasoning (from mix)
    1/2 ts Oregano leaves
    2 md Boneless chicken breast
    (about 3/4 lb -total)
    1/2 tb Olive oil

    MMMMM----------------------SAUCE - OPTIONAL---------------------------
    1/4 c Bbq sauce
    1/8 c Chili sauce
    1/2 ts Ground cumin

    Heat G.Foreman grill for five minutes.

    In shallow bowl, mix taco seasoning mix and oregano.

    Flatten chicken breasts to uniform thickness - not too thin, but large
    enough to have all the meat fit on the grill at the same time.

    Brush chicken with oil, coat with seasoning mixture.

    Place chicken on preheated grill. Close grill. Grill 4 - 5 minutes
    (depending on thickness of meat) until juice from chicken is clear and
    center of thickest part is done.

    If using sauce, place ingredients in small cup, heat in microwave
    until mixture is hot. Serve on the side.

    OVEN DIRECTIONS:

    Heat oven to 375. Line shallow baking pan with foil or spray with
    cooking spray. Place coated chicken in pan. Bake 25 to 30 minutes
    OR until juice runs clear.

    2010, yes.

    That is the only one in Canada that I recall. Flo was a nice host, and
    the picnic was of moderate size. I don't recall when Flo died, but I
    still get Facebook telling me to wish her happy birthday.

    Gail figured out a better way to do potato cakes, and it would probably
    also apply to this recipe. Instead of making patties that fall apart
    when you try to flip them, she made small meatball sized patties and
    cooked them in a miniature muffin pan. Comes out like large potato tots.

    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Left Over Rice Cakes
    Categories: Easy, Tested
    Yield: 2 Servings

    1 c Left over cooked white rice
    1 l Egg, beaten
    1/2 c Shredded cheese (cheddar)
    3 tb Small diced onion
    1 ts Garlic, pressed (or more)
    1/4 ts Red pepper flakes (or more)
    1 tb Dried parsley
    2 tb Vegetable oil (or more)

    Beat egg in medium bowl. Combine all ingredients except for the oil
    and place in fridge for at least 30 minutes.

    I used electric fry pan. Preheat pan to 325 and add oil. When oil is
    heated place medium scoop of mixture in fry pan and press down gently
    to make patty. This amount of rice will make 8 scoops.

    Fry patties about 10 minutes on first side, carefully flip over and
    fry other side for another 5 - 8 minutes. Careful when you flip as
    patties fall apart easily.

    Tested 10/2007. Will make again. Might add bacos?

    Yeah, I know. He had dropped his crystal ball when retrieving his baggage
    at an airport and it went out of focus. Was never accurate after that.

    12 oz (4 boxes yellow gelatin
    14 g (2 env) unflavored gelatin
    6 c Boiling water

    1 Cantaloupe
    1/4 Watermelon
    1 Honeydew melon

    SPECIAL EQUIPMENT: Cookie cutters: moon and star shapes

    FOR THE GELATIN: In a large, deep bowl, combine the
    gelatins. Pour the boiling water over the mixture and
    sir until completely dissolved. Refrigerate for 1 1/2
    hours or until partially set.

    Meanwhile, prepare the cosmic fruit: Cut cantaloupe,
    watermelon, and honeydew into stars and moon shapes.
    Press the fruit into the partially set gelatin, then
    refrigerate for 4 hours or until set.

    Place the bowl in a pan of hot water to loosen the
    gelatin from the sides, then invert onto a wizard-like
    platter.

    Yield: 16 to 18 servings

    It is! It becomes a cacaphony of cuisines and tasting. People cooking in your kitchen (all were polite and cleaned up). It's common to have some alimited bility to have a few guestrooms. Michael Loo stayed in my back ebedroom for xample.

    All hope is not lost for another one.

    Although I never attended any picnics, all were invited. And AFAIK
    everyone enjoyed their experiences. Thanks to those who hosted past
    picnics, and to those in future who decide to host possible future
    picnics. Now that the pandemic is over maybe there is hope ...

    Unlike the false claims made by Sean, Dave, and Ben this is an
    international echo and as such everyone is welcome. The same was
    also true about picnics, as all were invited no matter where one
    was from.

    Recipes and messages can be written in any language, not just English.
    Maybe I'll include a few, such as boiled crawfish, in Cajun French ...

    I'd like to see it revived but with both Michael and Nancy gone & you

    Our days of being able to host a picnic are indeed over. I think that
    we might be able to drive to one if not too far. We both are limited
    in our walking distance which would eliminate some types of side trips
    for us.

    Sadly, it's probably a thing of the past for the echo. We (Steve and I)
    are probably the most logical choice for hosting another one but I'm
    afraid the number of participants would be even fewer than the last one.
    We could travel to one, but again, the hosting of one by another
    participant is probably not very likely.

    That does look good. Have you made it again or does this remind you that

    have made my own with a mix of dried peppers (powders or flakes), cumin,
    a bit of powdered orange peel, pinch of salt and whatever else strikes
    my fancy from my spice cabinet.

    Title: Pepper Blend
    Categories: Testing
    Yield: 1 Bottle

    1 tb Salt
    -or try kosher salt?
    1 ts Dried thyme
    2 ts Onion powder
    1 ts Paprika
    2 ts Celery seed *see note
    2 ts White pepper
    2 ts Dry mustard
    2 ts Cracked black pepper

    Note: Press celery seed in mortor to crack seed

    Mix all ingredients and place in spice jar. Shake before using

    It's something we'll have to consider, probably not this year but maybe
    think about for next year. We've got some travel plans set for late May
    and a good bit of July, with plans for other events locally thruout the
    summer.

    I've done several things over the years that I've since lost (misplaced)
    the recipe for, have looked but not (yet) found. But, I've got enough
    cook books and recipies on line to choose from, I can always find
    something new to try.

    Interesting. We usually don't use pepper blends except for a peppercorn
    mix in the one grinder. It's a commercial mix of black, white, red and
    green peppercorns. Other peppers (ancho, chipotle, cayenne, etc) we keep
    in separate powdered form, combining as we use them.
