    Title: Cranberry Muffins
    Categories: Breads, Fruits, Nuts
    Yield: 18 servings

    2 c A-P flour
    1 c Sugar
    1 1/2 ts Baking powder
    1 ts Ground nutmeg
    1 ts Ground cinnamon
    1/2 ts Baking soda
    1/2 ts Ground ginger
    1/2 ts Salt
    2 ts Grated orange zest
    1/2 c Shortening
    3/4 c Orange juice
    2 lg Eggs; room temp, lightly
    - beaten
    1 tb Vanilla extract
    1 1/2 c Coarse chopped cranberries
    1 1/2 c Chopped pecans

    In a large bowl, combine the flour, sugar, baking
    powder, nutmeg, cinnamon, baking soda, ginger, salt and
    orange zest. Cut in shortening until crumbly. In a small
    bowl, combine the orange juice, eggs and vanilla. Stir
    into dry ingredients just until moistened. Fold in
    cranberries and nuts.

    Fill 18 greased or paper-lined muffin cups two-thirds
    full. Bake @ 375ºF/190ºC until a toothpick inserted in
    the middle comes out clean, 18-20 minutes. Cool in pans
    for 10 minutes before removing to wire rack. Serve warm.

    Title: Monkey Muffins

    Yield: 72 servings

    1/2 c Butter, softened
    1 c + 1 tb sugar; divided
    2 lg Eggs, room temperature
    1 c Mashed ripe bananas
    2/3 c Peanut butter
    1 tb Milk
    1 ts Vanilla extract
    2 c A-p flour
    1 ts Baking soda
    1/2 ts Salt
    3/4 c Miniature semisweet
    - chocolate chips

    Set oven @ 350ºF/175ºC.

    In a large bowl, cream butter and 1 cup sugar until
    light and fluffy. Add eggs, one at a time, beating well
    after each addition. Beat in the bananas, peanut butter,
    milk and vanilla. Combine the flour, baking soda and
    salt; add to creamed mixture just until moistened. Fold
    in chips.

    Fill greased or paper-lined miniature muffin cups
    three-fourths full. Sprinkle with remaining 1 tablespoon
    sugar. Bake until a toothpick inserted in the center
    comes out clean, 14-16 minutes. Cool for 5 minutes
    before removing from pans to wire racks. Serve warm.
