    at one of my local Indian buffets (Flavour of India).

    Title: Mango Sorbet
    Categories: Five, Fruits, I scream
    Yield: 1 servings

    2/3 c (160 g) raw cane sugar
    3 1/2 c (600 g) ripe mango flesh;
    - peeled, coarse chopped

    In a small pot over medium heat, whisk 1 1/3 cups (300
    grams) cold water and the sugar. Bring to a boil,
    stirring occasionally, until the sugar dissolves. Remove
    from the heat and let cool to room temperature.

    In a blender, add the mango and purée until liquefied.
    Transfer 2 2/3 cups (600 grams) of the pureed fruit into
    a large bowl and reserve; save the rest for another use.

    Whisk the prepared syrup into the mango puree. Transfer
    the mixture to the bowl of an ice cream maker, and churn
    according to the manufacturer's directions until the
    sorbet is thick and frozen, with the consistency of soft
    serve, about 30 minutes. Transfer to an airtight metal
    or plastic container and freeze until set, at least 3-4
    hours.

    To serve, dip an ice cream scoop or spoon in hot water,
    or temper the sorbet in the refrigerator for 20 minutes
    before scooping. Serve immediately.

    Makes 1 quart

    Definition of sorbet from the Oxford Dictionary: sor bet (noun) a dessert consisting of frozen fruit juice or flavoured water and sugar. ARCHAIC:
    an Arabian sherbet.

    So, yeah, it needs the sugar or one of the direct granulated replacement "sweeteners" like Splenda.

    Here's another sorbet I like to make when strawberries are "in" and I
    can pick my own.

    Title: Strawberry Sorbet
    Categories: Five, Fruits, Citrus, I scream
    Yield: 6 servings

    1 Whole lemon; seeded, rough
    - chopped
    2 c Sugar
    2 lb Strawberries; hulled
    Juice of 1 to 2 lemons

    Place the chopped lemon and sugar in a food processor,
    and pulse until combined. Transfer to a bowl.

    Puree the strawberries in a food processor, and add to
    the lemon mixture, along with the juice of 1 lemon.
    Taste and add more juice as desired. The lemon flavor
    should be intense but should not overpower the
    strawberries. Pour the mixture into an ice cream machine
    and churn until frozen.

    UDD NOTE: The sweet of the strawberries and sugar, the
    tart/bitter of the lemon all work together beautifully.

    Sometimes the mangos need a bit of sweetening. We've made the sorbet a
    number of times, not recently tho. One time we made it for our church
    small group, the group had a young (about 3 years old) boy who was
    highly allergic to dairy. He'd never had ice cream, which was the
    dessert that day for the group. When we presented him with a dish of
    mango sorbet and he tasted it, his face lit up big time. (G) He finally
    had an "ice cream" that was safe for him. We gave his mom and dad the
    recipe, don't know how often they've made it since but to see the look
    on his face that time was priceless.

    It's so neat to be able to do things like that. We've learned over the
    years how to cook, accomodating various health issues. On our first
    mission trip to VT, one young lady on the team approached us in the
    grocery store when we had the cart almost full of what we needed. She
    informed us then that she had certain allergies, issues, etc that
    precluded her being able to eat what we'd planned. We regrouped, picked
    up things like gluten free pasta and tortillas, other items that would accomodate her but allow her to eat basically the same things we served
    every body else. At the end of the week she was surprised we'd been able
    to pull it off on such short notice. BTW, before we left NC, we'd asked
    the group about allergies, etc and she'd never said anything then. One
    young man that has been on every mission trip we've made up to VT had a
    special request for me; I've remembered it every year since he first
    told me and easily accomodate it.
