    Just a "heads up" that SEstar is not, it seems, passing mail. The packet
    I uploaded yesterday has not appeared anywhere that I have checked. I've e-mailed Marc to let him know.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Bulletin Board Tortilla Rolls
    Categories: Breads, Appetisers, Dairy, Cheese, Chilies
    Yield: 60 Servings

    5 lg Flour tortillas
    1 bn Green onions; chopped
    4 oz Can chopped green chilies;
    - drained
    8 oz Cream cheese; softened
    8 oz Sour cream
    1/2 lb Cheddar cheese; shredded
    Salt & pepper
    Salsa, sour cream, guacamole
    - or your favorite dip ideas

    Have tortillas at room temperature. Place the remaining
    ingredients in a bowl mix with an electric mixer on low
    until well combined. Spread mixture thinly and evenly
    over tortillas within 1/8" of edge. Roll up jelly-roll
    fashion and wrap each tortilla in plastic wrap.

    Refrigerate overnight.

    When ready to serve, slice in 3/4" rounds and arrange on
    serving plate.

    Serve plain or with salsa.

    Note: tortillas will dry out if cut too far in advance.
    Serve with your favorite salsa or a few different dips,
    Ranch dressing, guacamole, sour cream, your choice.

    Makes about 60 appetizers.

    NOTES : These are good with crab meat, too!

    whatever was wrong got fixed. Hope it stays that way.


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Cajun Corn (Maque Choux)
    Categories: 4
    Yield: 4 Servings

    1 1/2 tb Butter
    1/4 c Onion,chopped
    1/8 c Green bell pepper, chopped
    1/8 c Red bell pepper, chopped
    1/2 ts Fresh garlic, minced
    1/2 ts Sugar
    1 ts Cajun Spice (used our ckn)
    1 lb Yellow corn frozen
    (or fresh off cob)
    1 ts Cayenne pepper
    1 tb Water
    15 oz Can cream corn
    2 md Fresh tomatoes, chopped
    1 ts Salt

    In large sauce pot, melt butter over medium high heat. Saute onion,
    green and red bell pepper and garlic until cooked, about 5 minutes.
    Add spice mix sugar, cayenne and corn kernels to pan, stir to coat
    kernels. Add water. Reduce heat to low and cook until cook becomes
    tender about 15 minutes. Stir occasionally to make sure corn does
    not stick to pan. Add cream corn, tomato and salt. Stir and bring
    corn to a simmer. Cook for five minutes remove from heat. Serve

    I e-mailed Marc about the outage. His reply indicated that someone had attempted to send games or some such which are verboten because they
    cause just the blockage we experienced. He re-booted his system and
    released the deluge.

    This would be great to side the poek chops from my last post.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Gryby w/Smetanye *
    Categories: Mushrooms, Dairy, Vegetables
    Yield: 4 servings

    6 tb Butter or margarine
    1 lg Onion; chopped
    2 tb A-P flour
    2 tb Milk
    1 1/2 c Sour cream
    1 1/4 lb Mushrooms; sliced
    3/4 ts Salt
    1/4 ts Pepper
    1/2 ts Paprika

    8 Mushrooms w/Sour Cream

    Melt butter in a large skillet & saute onion till
    golden. Sprinkle with flour, add milk & 3/4 c sour cream
    while stirring. Bring just to a simmer, add sliced
    mushrooms, salt, pepper & paprika. Simmer covered for 5
    mins. stirring occasionally.

    Stir in remaining sour cream, heat thoroughly while
    stirring constantly, & serve.
