    22 November 1963 - PRESIDENT JOHN F. KENNEDY SHOT AND KILLED IN DALLAS:
    A sniper kills John F. Kennedy, the 35th US president, as his motorcade
    wends through Dallas, Texas. Kennedy's wife, Jacqueline, and the Texas governor are traveling with him. Lee Harvey Oswald will soon be arrested
    for the shooting, but will be shot and killed himself shortly thereafter.

    Title: Jack Ruby's Potato Cheese Soup
    Categories: Potatoes, Cheese, Vegetables, Dairy, Pork
    Yield: 2 servings

    2 lg Russet potatoes
    2 tb Fine minced celery
    1 tb Fine minced onion
    1 tb Grated carrot
    2 c Chicken stock
    1 ts Salt
    2 ts White vinegar
    2 tb A-P flour
    1 1/2 c Milk
    1 c + 1 tb shredded cheddar
    1 tb Shredded Monterey-Jack
    2 sl Bacon; cooked, drained,
    - crumbled
    1 tb Chopped green onion

    Peel potatoes and chop into bite-size pieces.

    Make sure vegetables are minced into very small pieces-
    carrot should be grated, not shredded.

    In a large saucepan, combine vegetables with chicken
    stock, salt, and vinegar over medium heat.

    Bring to a boil, then turn down heat, cover, and simmer
    for 20 minutes.

    In a medium bowl, whisk together flour and milk.

    Remove saucepan with vegetables from heat and add flour
    and milk mixture.

    Return pan back to heat and simmer, uncovered, for 5 to
    8 minutes or until soup has thickened.

    Add 1 cup of shredded Cheddar cheese to soup and simmer
    until melted.

    By now the potatoes should be tender and falling apart.

    If not, continue cooking until soup is as thick as you
    like it.

    To serve, divide soup into 2 bowls.

    Divide remaining 1 tablespoon of Monterrey Jack and
    Cheddar cheeses and sprinkle on the soup.

    Crumble bacon and sprinkle evenly over the cheese.

    Top off each bowl of soup with chopped green onion.

    14 December 1863 - PRESIDENT ABRAHAM LINCOLN PARDONS HIS SISTER-IN-LAW:
    Lincoln pardons his relative, the widow of a Confederate general. When
    a Union general grouses about her presence at the White House, Lincoln retorts, "My wife and I are in the habit of choosing our own guests.
    We do not need from our friends either advice or assistance in the
    matter."

    Title: Abraham Lincoln's Scalloped Oysters
    Categories: Seafood, Breads, Dairy, Wine
    Yield: 6 Servings

    1/4 c Butter; melted
    2 c Coarse cracker crumbs
    24 Oysters; scrubbed, shucked,
    - drained, liquid reserved
    1/4 ts Black pepper
    1/3 c Cream
    2 tb Sherry
    1 ts Worcestershire sauce

    Mix melted butter and cracker crumbs together; sprinkle
    a third of mixture evenly on bottom of greased shallow
    baking dish. Add a layer of half of the oysters. Stir
    together the pepper, cream, reserved oyster liquid,
    sherry and Worcestershire; pour half of sauce mixture
    over oysters.

    Add another third of the butter and crumb mixture to
    baking dish and top with remaining oysters. Spoon or
    pour on remaining sauce. Sprinkle remaining crumb
    mixture over the top and bake at 425ºF/218ºC for 10
    to 15 minutes or until crumbs are lightly browned.

    19 February 1963 - BETTY FRIEDAN'S "THE FEMININE MYSTIQUE" PUBLISHED:
    Following a survey of her fellow Smith College alumni on the state of
    their lives, Betty Friedan releases her groundbreaking work on gender inequality. It will help launch what's considered the second wave of
    feminism in the United States.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Apple Brown Betty Friedan
    Categories: Breads, Fruits, Spices, Dairy, Booze
    Yield: 8 servings

    2 c Cubed, day-old bread
    1 c Light brown sugar
    1/2 ts Cinnamon
    1/2 ts Nutmeg
    1/2 ts Allspice
    1 ts Salt
    1 Lemon; juice & zest;
    - separated
    1 ts Vanilla
    6 Granny Smith apples; peeled,
    - thin sliced
    1/2 c Apple brandy
    4 tb Unsalted butter; thin sliced
    - divided
    Whipped cream; to serve

    Set oven @ 350ºF/175ºC.

    Grease an 8" x 8" baking dish. Spread cubed bread onto a
    baking sheet and toast for 8 to 10 minutes until dry.
    Pulse through a food processor until coarse. Layer 1/3
    of the crumbs into the greased baking dish.

    In a small bowl, combine sugar, spices, salt, and zest
    of lemon; set aside. In another bowl, combine lemon
    juice, vanilla, and apples. Spread half of the apples on
    top of the breadcrumbs and pour 1/4 cup of apple brandy
    evenly over the apples. Layer another third of crumbs
    and the remaining apples and apple brandy (or juice).
    Cover with the remaining crumbs. Dot the top of the
    crumb mixture with the butter.

    Bake the brown betty for about an hour, or until the
    liquid starts bubbling and the crust starts to brown.
    Cover with foil and bake for another 15 minutes. Cool
    and serve with freshly whipped cream.

    28 August 1963 - DR. KING DELIVERS A SPEECH OF DREAMS IN WASHINGTON, DC: Standing in front of the Lincoln Memorial, his voice ringing out to some 250,000 listeners, Dr. Martin Luther King, Jr. delivers a stirring
    speech that will galvanize the civil rights movement and be heralded as
    one of the greatest orations in American history.

    Around the halfway point of the speech, Mahalia Jackson implored him to
    "Tell 'em about the 'Dream,' Martin." Whether or not King consciously
    heard, he soon moved away from his prepared text.

    Repeating the mantra, "I have a dream," he offered up hope that "my four
    little children will one day live in a nation where they will not be
    judged by the color of their skin but by the content of their character"
    and the desire to "transform the jangling discords of our nation into a beautiful symphony of brotherhood."

    "And when this happens," he bellowed in his closing remarks, "and when
    we allow freedom ring, when we let it ring from every village and every
    hamlet, from every state and every city, we will be able to speed up
    that day when all of God's children, Black men and white men, Jews and Gentiles, Protestants and Catholics, will be able to join hands and sing
    in the words of the old Negro spiritual: ‘Free at last! Free at last!
    Thank God Almighty, we are free at last!'"

    Title: Dreamsicle Potato Bake
    Categories: Potatoes, Cheese, Vegetables, Dairy
    Yield: 4 Servings *

    1 lb Baking Potato
    1 lb Sweet Potato
    1 tb Finely chopped onion
    4 oz Whipped cream cheese;
    - divided
    1/2 c Sour cream; divided
    1/4 c Grated Parmesan Cheese
    1/4 c Shredded cheddar cheese

    MMMMM--------------------------TOPPING-------------------------------
    1/3 c Parmesan Cheese
    1/4 c Cheddar cheese

    Finely dice onion and mix with the cream cheese. Set aside
    so flavor of onion can blend with the cream cheese.

    Peel and dice potatoes and place each type in a separate
    saucepan - simmer until soft. Test for doneness with sharp
    knife. Drain well, place each type of potato back in its
    own hot pan to let the potatoes dry out a bit more. Heat
    under pan is not on, just the general heat retained in the
    saucepan.

    Add half each of the cream cheese and the sour cream to
    each pan. Mash with potato masher or mixer until smooth
    making sure not to mix one color potato into the other
    color.

    Stir the 1/4 cup parmesan cheese into the white potatoes.
    Stir the 1/4 cup cheddar cheese into the sweet potatoes.
    Mix well.

    Using a 1 1/2 quart casserole dish, Alternately layer half
    of the sweet potato and then half of the white potato.
    Ending with the white potato.

    If baking right away, sprinkle topping cheeses on top of
    potatoes and place in preheated 350øF/175øC oven for 20
    minutes or until heated through and cheese has melted.

    If made ahead and refrigerated - add cheese toppings just
    before you place the casserole in the preheated oven. Bake
    for 30 minutes or until heated through and topping cheese
    has melted.

    NOTE: The orange and white layers show off really well if
    baked in a clear glass baking pan.

    * UDD Notes: Doubles nicely. Can substitute Onion & Sour
    Cream dip for the mixing onion with the cream cheese. A
    potato "ricer" is a great help in preparation. Asiago
    may be substituted for the Parmesan - but, it will give
    a somewhat "sweeter" end result. A Pyrex bread loaf
    baking dish works a treat for "show-off".

    07 September 1963 - FOOTBALL GETS INTO THE FAME GAME: Canton, Ohio,
    birthplace of the National Football League, opens the Pro Football Hall
    of Fame in homage to a sport that's really catching on with the American public. Seventeen of the best players are inducted in the first
    ceremony, including Red Grange, Curly Lambeau, and Jim Thorpe.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Jimmy the Greek Stuffed Footballs
    Categories: Poultry, Rice, Breads
    Yield: 6 Servings

    3/4 c Water
    1/4 c Brown rice; uncooked
    1/2 lb Ground turkey
    1/2 c Minced Onion
    2 cl Garlic; minced
    1/2 ts Oregano
    1/2 ts Thyme
    1/2 ts Chicken bouillon granules
    1/4 ts Allspice
    1/4 ts Pepper
    2 Egg Whites
    1 lb Frozen bread dough
    1 ts Water
    1 1/2 ts Sesame seeds

    Bring 3/4 C. water to a boil in a saucepan. stir in
    rice. Cover, reduce heat & simmer 40 min. OR until
    rice is tender & water is absorbed. Remove from heat.
    Set aside.

    Combine turkey, onion & garlic in a large skillet.
    Cook over medium heat until turkey is browned & onion
    tender. Remove from heat. Stir in reserved rice,
    oregano, thyme, bouillon granules, allspice, pepper &
    1 egg white, blending well.

    Thaw bread dough according to directions. Place in a
    large bowl coated with cooking spray, turning once to
    coat top. Cover & let rise in a warm place (85ºF) free
    from drafts, 1 hour OR until doubled in bulk.

    Combine egg white & 1 ts water, blending well.

    Divide dough into 6 equal portions. Roll each portion
    to a 7 inch circle. Place 1/2 cup turkey mixture in
    center of each circle. Brush edges of dough with egg
    white mixture, fold in half & seal edges. Gently shape
    into an oblong ball.

    Place seam side sown on a baking sheet coated with
    cooking spray. Brush tops with egg white mixture;
    sprinkle with sesame seeds. Bake at 400ºF/205ºC for
    18 to 20 minutes OR until golden brown.

    Serve Warm or room temperature.

    Serve with 3 tb Cucumber-Yoghurt sauce.
